Oh my matcha! This crepe roll topped with whipped cream and strawberries, might be too much for my taste buds to handle (I'm kidding, it totally can).
In a bowl, combine all matcha whipped cream ingredients. Place in refrigerator to chill.
In a mixing bowl, combine all crepe batter ingredients. Heat a frying pan over medium heat. Pour a little dough into the pan, rotating pan to form the crepe as it cooks. Flip and cook opposite side until light brown. Repeat with remaining batter, and allow crepes to cool.
On a serving plate, lay out 1 crepe and coat with matcha whipped cream. Lay another crepe on top, leaving a few inches of the bottom crepe exposed. Add a layer of matcha whipped cream. Continue until you have 5 layers of crepes. Repeat this process once more, then roll one of the crepe stacks into a log. Lay the log on the other crepe stack and roll into a thicker log. Cut off ends of crepe log. Top with whipped cream, matcha powder and halved strawberries.
